We’re big soup fans in our home, and my SIL Cara recently sent me this Chicken Tortilla soup recipe. Its been a hit in our home, (and those I’ve taken dinner to) My favorite part is there are a lot of canned items so it’s a fast and easy meal to make! I also substitute the chicken with my canned chicken {tutorial here} which makes literally no cooking!

Ingredients
3 clove(s) garlic ( minced )3/4 onion ( chopped )
2 tablespoon butter
2 tablespoons flour
32 ounces chicken broth
2 cups half and half
1 Can (12 oz) cream of chicken soup
2 Can (14 oz) rotel
1 Can (15 oz) creamed corn
2 chicken breast ( cooked )
2 teaspoons ground cumin
1 package(s) fajita seasoning
3 tablespoons cilantro ( fresh chopped )
8 ounces monterey jack cheese ( shredded )
1/8 cup green onion
to taste tortilla chips, light

ReplyDeleteIt was good but really spicy. Was I suppose to add (2) 14oz cans of rotel or 14oz total? I have loved reading your blog. You have such a cute family. Thanks for being an inspiration to all of us!
ReplyDeleteI think it depends on the rotel. Sometimes I'll add two cans and its fine, and then others its been spicy. So I add one and then taste it to see how spicy it is. Maybe I'll add that to the notes.
